MAMA MIA: IT’S CHICKEN MARSALA!
Despite the fact that this iconic dish is a menu staple at virtually every Italian American restaurant in the United States, it is rarely made at home. And that’s too bad, because it’s relatively simple to prepare once you learn a couple of techniques. When done right it is a dreamy and satisfying dish. Start with chicken breast that is pounded into a cutlet, then pan-seared until golden brown but still tender and juicy. And then there’s that ridiculously amazing pan-sauce made with Marsala wine and mushrooms.
Stop it already. I’m hungry.

Enjoy this recipe from our Flash Demo on Bad-Ass Street Tacos! Chef Raven Naramore prepared this Pollo Tinga recipe and added Salsa Verde to make some awesome tacos, and then she served it up with a Creamy Mexican Coleslaw. Try it out and see what you think – ¡Olé!
- 3-4 chicken breast
- 1-2 large onions sliced
- 4-5 tomatoes chopped
- 1 can of chipotle chiles in Adobo
- 2-3 cloves of garlic
- salt and pepper
- 4-5 tablespoons of oil (I used olive oil)
Bring a pot with water to a boil and add the chicken breast to cook. Let them simmer until the chicken is cooked through. Remove chicken from water to cool and reserve water. When cool enough to handle shred with a fork or fingers.
While the chicken is cooking, slice the onions. Heat the oil in a large pan and add the onion and cook until soft and translucent for about 5-6 minutes.
In a blender, throw the tomatoes, garlic, salt, pepper and 2-3 chipotle chiles from the can. These are spicy, so if you are sensitive to heat, add one and then taste before adding more. After blending the ingredients, adjust salsa for salt and pepper. Pour the salsa over onions and simmer over low heat. Add the now shredded chicken and simmer for 5 minutes or until chicken is warmed through.
We launched our new cooking class concept, the Flash Demo™, in January to great success. A Flash Demo is a power-packed one-hour cooking demonstration held on Saturdays from 11 a.m. – Noon (and Wednesday morning from 10 – 11 a.m. beginning May 24, when the Overland Park Farmers Market opens their Wednesday markets). They concentrate on one particular recipe, ingredient or technique, and they’re taught by our seasoned chef/instructors. Each Flash Demo is priced at $25 with pre-registration ($30 for walk-ins) and includes tasting and recipes. It is the perfect quick & easy way for busy foodies to learn how to cook. What a great way to spend a morning with plenty of time left to enjoy the day. We have had some awesome topics so far (see below) but we’d like your help to design our summer Flash Demo schedule.

Let us know what recipe, ingredient or technique you’d like to see featured in a CCKC Flash Demo. We’ll take the very best of the submissions and then ask you to vote on the winning topic. We’ll turn that idea into a Flash Demo – and of course, the person who submitted that idea will be recognized.

The Culinary Center of Kansas City is proud to be a part of this year’s Western Farm Show at the American Royal Complex in KC on Feb 24-26. We have partnered with American Family Insurance to provide cooking demonstrations at this very popular event attended by more than 22,000 fine farming folks. Our Kitchen Shop will also have a presence, where we will have our signature Kitchen Boa™ available for sale.
We’ll be set up in the Wagstaff Theater inside the American Royal Complex where Chef Sandy DiGiovanni will demonstrate Freezable One Pot Wonders from 11 a.m. – Noon on Saturday, Feb 25, and Chef Daniela Mancinelli Abel will present Weeknight Meals Made Easy from 1:00 – 2:00 p.m.
The farm show, one of the largest indoor farms shows in the Midwest, will also feature hundreds of exhibitors showing the latest in farm and ranch tools and technology, plus booths with clothing, crafts and home decor.

NOTE: The cooking demonstrations are free to paid attendees of the Western Farm Show. American Family Insurance is distributing the free passes to the cooking shows, but a paid admission to the Western Farm Show is required to attend them. Adult admission is $8 and free for children 12 and under.
