Offer to make dinner for Mom and the family. Chef Sergio will help out. Just pick her favorite dish from our Dinners on Demand freezers full of food. Pick Up Some ‘Reuben the Great’ Casseroles For St. Patty’s Day

We us some St. Patrick’s Day here at The Culinary Center of Kansas City. We’re already gearing up for it! Chef Sergio cooked up some ‘Reuben the Great’ Casserole this week that is now available in our Dinners on Demand freezers in The Kitchen Shop. It’s an annual tradition around here – a fully loaded casserole with all the same delicious ingredients as a Reuben sandwich. If you love Reubens, you will love this! It’s great at any time of the year, but it’s a MUST in March.

Ever wonder where the Reuben sandwich got its name?
We hear that the story goes like this… 
The year was 1914. Late one evening a leading lady of actor Charlie Chaplin came into the restaurant and said, ‘Reuben, make me a sandwich, make it a combination, I’m so hungry I could eat a brick.’  He took a loaf of rye bread, cut two slices on the bias and stacked one piece with sliced Virginia ham, roast turkey, and imported Swiss cheese, topped off with coleslaw and lots of Reuben’s special Russian dressing and the second slice of bread.  He served it to the lady who said, ‘Gee, Reuben, this is the best sandwich I ever ate, you ought to call it an Annette Seelos Special.’  To which he replied, ‘Like hell I will, I’ll call it a Reuben’s Special.’

Here’s the recipe for our ‘Reuben the Great’ Casserole.

‘Reuben the Great’ Casserole

  • 'Reuben the Great' Casserole1 loaf rye bread, cut into cubes, divided
  • 16 ounces sauerkraut
  • 1 ½ cups Swiss cheese, shredded, divided
  • 1 cup sour cream
  • ½ cup Thousand Island dressing
  • 2 cups corned beef, cut into small pieces
  • ½ cup butter, melted

Preheat oven to 350 degrees.

Place half of bread crumbs in 9 x 13-inch pan.  Spread the sauerkraut on top of bread layer.

In a small bowl, mix sour cream and dressing, and spoon half on top of sauerkraut layer.

Next, layer on 1 cup Swiss cheese, then the corned beef. Add a layer of the sour cream/dressing mix on top of the corned beef. Top with remainder of bread crumbs, then remainder of Swiss cheese. Drizzle melted butter over it all. Cover with foil and bake for 30 minutes. Remove foil and bake another 10 minutes. Serve warm. Serves 8-10.

Let Our Chefs Prepare Your Dinner

We have loads of food in our Dinners on Demand™ freezers at The Culinary Center of Kansas City just waiting for you to take home and serve at your own table.

Dinners on Demand @ CCKCFill your freezers with Dinners on Demand™ dishes, or even use it for dinner tonight!  Our chefs prepare entrees, soups, sides, appetizers, desserts and other misc. goodies to take home and fill your freezer – convenient for busy families, folks who don’t care to cook, last-minute guests, and even gifts for new parents or sick friends or family.

On our listing of foods in our Dinners on Demand™ freezers, we make dishes that are Gluten Sensitive.  (Our kitchens aren’t technically ‘Gluten Free’ because we do cook with gluten in them. We’re super clean freaks, but there’s always an outside chance that it came into contact with something that has gluten. However, the Gluten Sensitive (marked GS) items are ones in which we haven’t added any gluten.)

We also mark dishes with an * that include directions to prepare straight from frozen. These are fabulous choices to take home for dinner TONIGHT!  Most of our dishes we recommend thawing overnight in the refrigerator before preparing or serving.

Ingredients and cooking instructions are listed on the label of each dish, so take a look – we have something for just about everyone, whether you’re lactose-intolerant or vegetarian, etc.

Development Day in the CCKC Kitchen

October 26, 2016

Chef Richard McFarlane-Clark has been a busy cook in The Culinary Center of Kansas City kitchens this past week or two. He has been filling our Dinners on Demand freezers with delicious dishes.  We have added Pumpkin Soup, Leek and Potato Soup, Ooh-La-La French Onion Soup, Creamy Country Mushroom Soup, Miso-Sesame Vinaigrette and Thai Peanut Sauce. Yum…

dod-soupToday, Chef Richard spent time developing new dishes and refining others that we have been loving for years. (We were his taste-testers in the CCKC office. It’s a really tough job, but someone has to do it!)  We have a new and hard-to-believe-but-improved Chicken Enchilada Casserole and some spectacular Just-Like-Julia’s Beef Bourguignon that was added to the Dinners on Demand freezers today. And look for some tasty new dishes like Ultimate Creamy Mashed Potatoes, Bacon & Sweet Corn Bake, Pommes Dauphinoise (Potato in Cream), Gluten-Free Pasta Alfredo and more… coming soon!

Local Life in Review…

May 26, 2016

If you weren’t in Downtown Overland Park for Local Life last Friday, you missed a party, my friends.  The weather turned out to be great despite a rainy week all around it. There were lots of people walking the streets of Downtown OP, shopping, listening to music, sampling food & drinks, eating and enjoying the atmosphere of our creative community.

At The Culinary Center of Kansas City, we had local makers Dēz Nüts handing out samples of some new nut recipes they’re developing (delicious!), we sampled our Mexican Pozole soup and Bacon Jam from the Dinners on Demand freezers in The Kitchen Shop, Defiance Brewery, Writer’s Block Wines and Union Horse Distillery all gave out tastings of their drinks (tasty!), the legendary Joe Kieltyka of the original Stonewall Inn did a cooking demonstration making pizza and offered samples and recipes (wow!),  gypsy jazz trio Mire Pral performed a free concert and our chefs prepared Roasted Garlic & Savory Herb Cheesecakes served with crostini for purchase at the cash bar.  Our friend Andy was out front with some of his creations from wine barrels and Farmer Steven had a colorful display of vegetables along with information about CSAs and Just Natural Farms. This place was hoppin’!!

Lucky for you, if you did miss it, we celebrate Local Life on the Third Friday of each month, so you can join us Friday, June 17. Mark it in your calendar now, because you won’t want to miss the fun.
