Smoked Meatloaf

  • 2 tablespoons butter, unsalted
  • 1 yellow onion, finely chopped
  • 1 carrot, finely diced
  • 1 stalk celery, finely diced
  • 3 pounds ground beef
  • 2 tablespoons garlic powder
  • 1 cup of your favorite BBQ sauce, plus 1 to 2 cups more for basting
  • Salt and freshly ground black pepper to taste

Heat butter in a skillet over medium heat. Add onions, carrots, and celery and sauté until soft. Transfer to a mixing bowl. Add the beef, garlic powder, BBQ sauce, salt, and pepper. Mix well and place in a loaf pan.

Set up your smoker to burn at 225 degrees, and smoke the meatloaf for 2 hours, uncovered. Remove and finish in a 350 degree oven until internal temp reaches 165 degrees on an instant-read thermometer. Baste with additional 1-2 cups of BBQ sauce for a nice crust.  Let rest for 10 minutes, then slice and serve.  Makes 4-6 servings

Would you consider a class or two on plant based cooking? Lots of consumers in our area are vegan or vegetarian so such an offering might be of interest to thatbgroup. Perhsps people judt getting started willnfind that plant based eating is easier thsn they might have thought. Thanks.
